Balsamic Chicken Salad
Ingredients
4 cups spinach (or mixed greens)
4 ounces cooked chicken breast, cubed
1/4 cup lightly-salted roasted almonds
2/3 cup red seedless grapes
1/4 cup reduced-sugar dried cranberries
1 ounce goat cheese, crumbled
2-4 tablespoons light balsamic dressing
Instructions
Add the spinach, cubed cooked chicken, roasted almonds, grapes, and dried cranberries in a bowl. Toss to mix ingredients throughout.
Portion the salad onto a plate for a meal or two plates for sides.
Sprinkle the goat cheese on top of the salad.
Drizzle with light balsamic dressing.* Enjoy!
* Add the balsamic dressing just before digging in. If you are meal prepping, wait to add the dressing until you’re ready to eat it. This helps keep all of the ingredients fresh for longer.
Note: Feel free to cut the grapes in half or chop up the almonds. I usually leave them whole since it saves time & dishes and keeps the salad fresher when meal prepping it.
